Much Ado About Dinner: Egg Rolls and Fried Rice

I knew you would be SO curious as to what we're having for dinner tonight. And because I NEVER disappoint, I will tell you.

Egg Rolls (a favorite from my past-time. Mom made the BEST eggrolls EVER)
Fried Rice (another favorite - it was always the side to the eggrolls)

Aaaaand, that's it.

We have so many leftovers (Veggie Pizza and Cake Mix Cookies) from the past few days that we just need to finish those off.

Now I'm going to share our family Eggroll and Fried Rice recipes with you. Enjoy!

Egg Rolls

Ingredients:

1# ground beef
1 package of cole slaw mix (shredded cabbage and carrots)
1 package of egg roll wrappers
1 egg
oil

Directions:

Brown ground beef; drain and put in a large mixing bowl.
Add cole slaw mix and well, mix!

Break egg into a small bowl.
Separate an egg roll wrapper from the stack and spoon filling onto wrapper.
Follow directions on egg roll wrapper package as to how to wrap them.
Use egg white to seal your wrapper.

Fry Egg Rolls in hot oil until brown and crispy!

It's that easy.

Fried Rice

Ingredients:

Rice
Soy Sauce
Bacon - fried and cut into small pieces
Eggs - scrambled
Green Onions - chopped
Packet of Fried Rice Seasoning

Directions:

Prepare Rice accordingly.
Add to skillet w/ cooked, chopped bacon, scrambled eggs and chopped green onions.
Add Soy Sauce until mixture is light brown (not too much!)

Ta Da!

Again, going by memory...be gracious. ;)

An Arrow Through the Heel

It was a beautiful day. A perfect day to revive my love for running. So, I busted out my new pair of New Balance running shoes (that have been waiting to be used since I bought them back in March). They're pink and grey, which makes me happy. They were also only $20, which makes me even more happy.

Because it's been nearly 2 years...two sad, sad years...since I've run, I stretched for a long 15 minutes to remind my body what it felt like and to warn my body just what we were getting into.

And then I took the step. The running step. Oh, did it feel good. For about 10 strides, it felt good. Then I remembered that running requires breathing. So, I focused on that. Another 10 strides later, I'm reminded of the fact that I am totally and completely out of shape. I stop. I breath. I hold my hands over my head and walk. I run again. And feel even better this time.

I decide to work up in small increments of 100-200 meters of running, then walking and running again. Each time I run, I go farther and each time I walk, it gets shorter. I'm making progress. By my last increment I'm running about 400 meters and because I'm starting to feel awesome again, I sprint the last 100, like a real runner.

I cool down with the same series of stretches I started with. This time I bring Jim with me and we walk my route as I talk him through my first attempt at going back to running. I feel good. Really good. Although my body aches, I know it's a good ache. I am eager to hit the pavement again.

Unfortunately, today I woke up with a twinge of pain just above my left heal. Every runner, even old runners know that feeling is not good news. You know that dude from Greek Mythology - his name was Achilles and he had an arrow shot through his heel...and he died. I'm not sure how comforting it is to think of that. But, I know that I've strained my Achilles Tendon...and I have to lay of the running for a bit. And now, I'm sad. I guess that last 100 meter sprint just wasn't meant to be. I just hope I can enjoy a run sometime this fall. There is nothing quite like running through crunchy leaves on a crisp fall afternoon. Nothing.

New Jobs and other Random Bits.

So, I started this New Job on Monday. It's part-time...and I like my Hubby Time and Friend Time, too. So, that seems to leave little time for posting. So, excuse my absence, but I must adjust to my new schedule and hopefully, I'll be a more faithful blogger.

By the way, my ICL Prof like my story...except she didn't call it a story. It doesn't count for a story. It's more a of a vignette, she said. True, true. Most stories have a plot. Mine was, well...it just was.

Jim and I went to the Iowa State Fair yesterday (for free). It was completely awesome. Fifteen straigt HOURS of complete awesomeness, to be exact. More on that later.

And did you know that in British/English French Fries are called "Chips" and Chips are called "Crisps?"

And that today is "Sneak some Zucchini onto your Neighbors Porch Night?" We don't have Zucchini, so we can't participate. *sigh*

BUT, it's also "Dollar Day" - the day the US dollar was created. Hmm...how can I celebrate that?

Fear not, though. It's "Admit you're Happy Day", too...and that's free.

And for the girls...it's "Girls Night Out." So, go out and do something crazy. (Legal Crazy, and Moral Crazy that is.)

Much Ado About Diapers, My Washer, Food (or not), Rain & Gum

  • Today was the first day in the history of my life that I purchased diapers. For a baby shower. And they're pricey, but necessary, which is what makes them an awesome baby shower gift.
  • My washer danced around the room today because it's off balance and because I'm not sure how to fix it, I stood there, bracing each side of the washer until it was done with the spin cycle.
  • I'm not going to tell you what I had for lunch. According to a book title about blogs, you're not interested.
  • I'm making Jim's favorite, Lasagna, for dinner. But, shhh. It's a surprise. And it's the easiest, fastest and yummiest lasagna recipe EVER. Not like you care any more about my dinner as you do about my lunch.
  • I haven't had to water the flowers or our garden for weeks. Thanks to the abundant supply of rain around here. Some farmers might not see it as such a convenience, though.
  • I had my friend Hanna over for lunch yesterday. She brought over a super tasty side dish of potato salad. Another easy, tasty recipe I'm sure to try out myself. Apparently, I can't resist telling you about yesterday's lunch. But, I'm still not telling you about today's.
  • Recently, I tried out a new flavor of Orbit Gum. It's the Pomegranate flavored one, and after about 30 chews, it turns to mush. I wouldn't recommend it.

Well, that's about all the nothing I can come up with for now. I'm off! Cheerio!
